The Willamette Valley is a perfect home for this aggressive invader. What a lot of people don't know is it makes arguably the finest honey on the planet. The bushes bloom June and July. Pure Blackberry is very light, sometimes almost clear, with a mild, caramel flavor. Clover
The most well known, and most common flavor. A staple of households and gourmet chefs throughout time.
Rich, bold flavor. Wildflower
A late summer honey gathered from a mix of flowers in the Eastern Willamette Valley. Very rich and thick. Has earthy floral tones and an intense sweet flavor that feels like late summer!

Other varieties.
I often have smaller amounts of distinct and sometimes very unusual honeys available, gathered from different pollinations my bees are doing. I'll try to keep an updated list of flavors available.
1) Phacelia Collected from pollinating a Phacelia field near Albany. A very unique and unusual blend of spicy and lemony notes give it a very exotic flavor. 2) Blue Berry. Collected while Pollinating Blueberry crops. My wife's favorite! A dark, hearty zing of spring flowers. |

Bees Wax
Collected as a by-product of extraction by cutting the cappings from frames. Honey is allowed to drain, then the wax is melted, separating the pure wax from impurities
